Eggplant Fries



I don’t know if just because these are eggplants baked that they are healthy, but I’d like to think they are.
 
Place a baking rack on a baking sheet lined with foil and set aside.
 
Preheat the oven to 425 degrees.
 
1 medium eggplant
½  c flour
2 eggs, lightly beaten
¾ c breadcrumbs
¼ c parmesan cheese
½  t dried thyme
½ t dried oregano
salt and pepper to taste
Peel and cut eggplants into strips the length of french fries.
 
Mix the breadcrumbs, cheese and seasonings together.
 
Place the flour in one bowl, the beaten eggs in a second bowl and the breadcrumb mixture in a third Place the eggplant fries in the flour, dip them in the egg and then into the breadcrumb mixture.
 
Place the eggplant slices on the rack on the prepared baking sheet, spritz with olive oil and bake for ten minutes or until golden.  Serve with homemade marinara sauce – yum!
