Fig, Blue Cheese, Proscuitto Pizza

This pizza is great for dinner or as an appetizer.  Perfect for a Friday night with a glass of wine and shared with good friends.

  • 2 T olive oil
  • 1 batch homemade pizza dough
  • 1 jar fig jam
  • 1 c mozzarella cheese
  • ½ c bleu cheese
  • 4 slices procuitto
  • 2 figs, sliced
  • Pignoli nuts
  • arugula

 Grease a pizza stone (or baking sheet) with oil and set aside.

 Preheat oven to 375 degrees.

 Place the dough on a floured board and roll out and place on prepared stone.   Spread jam on dough leaving a half inch boarder around the edges.   Sprinkle half cup mozzarella cheese, pignoli nuts and crumble bleu cheese on top.   Tear strips of prosciutto and place on pizza.   Dot with fig slices and bake for fifteen minutes or until crust is golden.   Remove from oven, place arugula on pizza and return to the oven for one minute.  Remove from the oven and drizzle with concentrated balsamic dressing and serve.
