Lemon Butter Cookies
These were very popular when we grew up. This is another of our grandmother's recipes that bring back many wonderful memories.
3 c flour
1 t baking soda
¼ t salt
¼ t cream of tartar
1 c butter, room temperature
1 ½ c sugar
½ c brown sugar, packed
2 large eggs, room temperature
Zest of one lemon
Juice of one lemon
Raw sugar in a bowl
Grease baking sheets and set aside.
Preheat oven to 350°.
Place flour, baking soda, salt and cream
of tartar in a bowl and whisk together.
Set aside.
Place butter, sugar and brown sugar in a
large bowl and beat until incorporated. Add eggs, one at a time and beat. Add lemon zest and juice and beat. Add the dry ingredients a little at a time.
Roll into balls and place on prepared
baking sheets about four inches apart. Press the first cookie with the bottom of a
glass to flatten then dip in the raw sugar. Continue until all cookies are
flattened, coating the bottom with the sugar each time before flattening the cookies. Make sure to sprinkle the
first cookie with raw sugar. Bake for
fifteen minutes. Cool on a wire rack.
