Morning Quesadillas


Why just enjoy quesadillas for dinner.   These are made with eggs and make a fabulous breakfast option.
  • 2 T butter
  • 8 large eggs
  • 4 flour tortillas, seven inches
  • 8 ozs cheddar cheese, shredded
  • 8 ozs monterey jack cheese, shredded  
  • 1 lb sweet Italian sausage, without casing cooked
  • 4 oz. can mild diced green chilies, diced small
  • 1 T chili powder
  • 1 T cumin
  • 1 T paprika
  • 1 T garlic powder
  • 1 T onion powder
  • salt and pepper to taste
  • cilantro
 
Place the eggs in a medium bowl and whisk together. 
 
Place butter in a skillet over medium heat and when melted, cook the eggs.  Remove them from the pan and set aside.  Do not overcook.
 
Place all four tortillas on a board and sprinkle with some cheddar and jack cheese.   Do not overload as the tortillas will be folded in half.   Sprinkle on cooked sausage, then eggs and then chilies.   Season each with chili powder, cumin paprika, garlic powder, onion powder, salt and pepper.   Sprinkle more cheddar and jack cheese on top.   Sprinkle with cilantro and fold over.
 
Place the quesadillas in a skillet over medium heat and cook for three minutes.   Flip and cook other side for three minutes.   Continue with remaining quesadillas.   Serve warm with sour cream and guacamole and chopped tomatoes.
