Oatmeal Cookies


There's nothing like warm oatmeal cookies and a tall glass of ice cold milk!
  • 2 c flour
  • 1 t baking soda
  • 1 t baking powder
  • 1 t salt
  • 1 c butter
  • 1 c brown sugar
  • 1 c sugar
  • 2 t vanilla
  • 2 T milk
  • 2 large eggs
  • 2 1/2 c old-fashioned oats
  • 12 ozs chocolate chips
  • ¾ c shredded coconut

Preheat the oven to 350 degrees.
 
Line to baking sheets with parchment paper and set aside.
 
Place the flour, baking soda, baking powder, and salt in a bowl and whisk together.  Set aside.
 
Place the butter and sugars in a large bowl and beat to combine.   Add the vanilla, the milk, and the eggs (one at a time).  Beat until well combined.   Add the flour mixture gradually.   Mix only until the flour is incorporated.   Stir in the oats, chocolate chips and coconut.
 
Shape the dough into balls and arrange on the prepared baking sheets, a couple inches apart.  With the bottom of a glass, press the dough to flatten slightly.
 
Bake ten to twelve minutes, remove from the oven and let the cookies rest on the baking sheet for a couple minutes.   Then, remove wire racks.
