Roasted Chickpeas


My daughter, Melissa turned me on to roasted chickpeas.  They are delicious and inexpensive to make for a party.
   
  • 2 c chickpeas, drained and rinsed
  • 1 T oil
  • 1 garlic clove, minced
  • ½ t oregano
  • salt and pepper to taste

Preheat oven to 425 degrees.

Line a baking sheet with parchment paper and set aside.

Place chickpeas on a paper towel, pat dry and remove any skins.

Place the oil,garlic, oregano, salt and pepper in a medium bowl, whisk together and add chickpeas.   Mix and  place on the prepared baking sheet in a single layer.

Bake for fifteen minutes, stir, then bake for another fifteen minutes.   Cool and enjoy!
