Thanksgiving Brownies

These are called Thanksgiving brownies because they resemble pecan pie, but they are good anytime.
  • 1/3 c canola oil
  • ½ stick butter, melted
  • 4 T cocoa powder
  • 2 large eggs
  • ¾  c sugar
  • ½  t vanilla
  • ¾  flour
  • ¼  t salt
  • ¼ c chocolate chips
Pre-heat oven to 350.
 
Grease a 9x13 baking pan and aside.
 
Place the canola oil and butter in a large bowl and whisk.  Stir in cocoa and stir until incorporated.
Whisk in the eggs, sugar and vanilla, mix well.  Stir in flour and salt. Stir in chocolate chips and spread evenly in pan.  Bake for 10 minutes.  Remove from the oven, but keep the oven on.
  • 1 c brown sugar, packed
  • 1 c corn syrup
  • 4 large eggs
  • 2 T vanilla
  • ¼ t cinnamon
  • ½  c butter melted
  • 2 T whiskey
  • 4 c pecans, chopped
  • ½ c chocolate chips
Beat the corn syrup and sugar until smooth.   Add eggs, vanilla and cinnamon.  Add butter and whiskey. When combined, fold in chopped pecans and chocolate chips and pour over the brownies and bake for half an hour or until pecan topping is set.    Let cool completely before cutting.
