Turkey in Puff Pastry



Wondering what to do with your Thanksgiving leftovers?  Here's an idea.
  • 2 c leftover turkey
  • ½  c cranberry sauce
  • 10 ozs. Spinach
  • 8 ozs blue cheese crumbled
  • 1/2 cup Fontina Cheese, shredded
  • 1 lb. puff pastry
  • 1 large egg
 
Preheat oven to 400 degrees.
 
Place the turkey, cranberry sauce, spinach, and blue cheese in a large bowl and mix to combine.  Set aside.
 
On a lightly floured board, roll pastry into a 12” x 10” rectangle and then cut each into 2 pieces.   Place on a greased baking sheet and set aside.
 
Spoon filling mixture onto each pastry, leaving a pastry boarder and top with some fontina cheese.
 
Lightly brush pastry edges with water. Bring long sides over filling, pinching seams and ends to seal. Turn pastries seam side down and cut small slits into pastry. Brush tops with beaten egg.
 
Bake for twenty five minutes.  Remove from the oven and allow to rest for ten minutes.
