What else can I say except, Mmm, Mmm good!
- 3 T butter
- 1 onion, sliced
- salt and pepper
- ¾ c beer
- 6 pieces of pastrami
- 2 t worcestershire sauce
- 1 T spicy mustard
- 1 ½ c swiss cheese, shredded
- pumpernickel bread
Place 2 tablespoons butter in a large
skillet over medium heat.
Add the onion and salt and pepper to taste. Cook for five minutes.
Stir in the beer and continue cooking,
stirring occasionally for eight more minutes.
Remove from the heat and stir in worcestershire
sauce and mustard.
Place the onion
mixture to a small bowl and set aside.
Place the pastrami in the same skillet until
just warmed through.
Remove from the
heat and set aside.
Lightly butter the outsides of all four
pieces of pumpernickel bread. On two of the unbuttered sides, divide half of
the cheese.
Place equal amounts of hot
pastrami and onions on top of the cheese. Sprinkle with the remaining cheese and then
place unbuttered sides of bread on top of the cheese.
Melt the remaining one tablespoon butter
in a large skillet over medium heat.
Place
the sandwiches to the skillet and cook until the bread is toasted and the
cheese melts, about four minutes per side.
