Beef Paprikash



In our family, chicken paprikash is a beloved dish. Beef paprikash is a tasty alternative.

  • 2 ½ lbs. boneless beef chuck, in 1-inch cubes
  • 1 c onion, chopped
  • 1 c green bell pepper, chopped
  • salt and pepper to taste
  • 3 c beef broth
  • 3 T tomato paste
  • 1 T Paprika
  • 1 c sour cream
 
Place beef, onion and bell pepper in a crock pot.
 
In a separate bowl, mix salt and pepper, add broth, tomato paste and paprika.   Pour over beef and vegetables.  Stir to coat well and cover.
Cook for eight hours on low or four hours on high.
 
Stir in sour cream until well blended, cover and cook ten minutes longer on low.   Serve over cooked egg noodles or rice and enjoy!
