Pistachio-Feta Appetizer Truffles
Absolutely a hit at any party, pistachio-feta truffles are a crowd pleaser!
Preheat the oven to 400 degrees F.
Place the cream cheese, mayonnaise and garlic
in a food processor and process until smooth. Add the basil and thyme and pulse until combined.
Add the salt, pepper, feta, sun-dried
tomatoes and olive oil. Pulse into small chunks. Place in the fridge for an hour.
Roll cheese mixture into three quarter-inch
balls, roll each ball in the pistachios. Serve with toasted baguette rounds.
- 8 zs cream cheese, room temperature
- 2 cloves garlic, minced
- 2 T mayonnaise
- 3 T fresh basil
- 1 t thyme
- 6 ozs feta cheese
- 1/3 c sun-dried tomatoes, chopped
- 1 T olive oil
- salt and pepper to taste
- 1 ½ c pistachios, chopped
