Pistachio-Feta Appetizer Truffles

Absolutely a hit at any party, pistachio-feta truffles are a crowd pleaser!
  • 8 zs cream cheese, room temperature
  • 2 cloves garlic, minced
  • 2 T mayonnaise
  • 3 T fresh basil
  • 1 t thyme
  • 6 ozs feta cheese
  • 1/3 c sun-dried tomatoes, chopped
  • 1 T olive oil
  • salt and pepper to taste
  • 1 ½ c pistachios, chopped
 
Preheat the oven to 400 degrees F.
 
Place the cream cheese, mayonnaise and garlic in a food processor and process until smooth.   Add the basil and thyme and pulse until combined.   Add the salt, pepper, feta, sun-dried tomatoes and olive oil. Pulse into small chunks.   Place in the fridge for an hour.
 
Roll cheese mixture into three quarter-inch balls, roll each ball in the pistachios.   Serve with toasted baguette rounds.
