Yellow Beet Hummus
Rich in vitamins and flavorful, this hummus is perfect for a New Year's Eve appetizer.
- 5 yellow beets roasted, peeled & diced
- 1/4 c cannellini beans (canned)
- 1 garlic clove, chopped
- ½ t salt
- 3 T fresh lemon juice
- 3 T olive oil
Place the roasted beets, beans, garlic and salt in a food processor. Process until smooth and add the lemon juice and olive oil. Add enough olive oil to create a smooth puree. Spread onto a plate to serve.
