Crabmeat Stuffed Mushrooms

With Lent on the horizon, it's time to start thinking of fish and no meat recipes for Friday night entertaining.  Crabmeat stuffed mushrooms are loaded with flavor and quick to make.

  • 1 lb large mushrooms
  • 6 oz lump crab meat
  • ¼ c mayonnaise
  • 1 t lemon juice
  • ½ small onion, minced
  • 2 T mushroom stems
  • salt and pepper to taste
  • ½ lb bacon

Preheat oven to 350 degrees.

Line a platter with paper towel and set aside.

Rinse and dry mushrooms.  Remove stems, chop well and set aside.

Place crabmeat, mayonnaise, lemon juice, onion stems, salt and black pepper in a large bowl and mix together. 

Place mixture in mushroom caps with mixture and place half a slice of bacon on each.   Place on baking sheet and bake until bacon is crisp. Remove and place on prepared platter and serve.
