Mushroom and Onion Appetizer

This appetizer would be a wonderful start to a Valentine's dinner.  Because the crust is pre-cooked, they remain crispy, not soggy.

  • 36 won ton wrappers
  • 5 T butter
  • 12 ozs mushrooms, diced
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 4 ozs cream cheese
  • 1 t parsley
  • 1/3 c prosciutto, chopped

Preheat oven to 350°.

Grease 36 mini-muffin cups.   Place wonton wrappers, in prepared muffin cups and press onto sides and bottoms.  Melt 2 tablespoons of butter and brush on wonton wrappers.  Bake for five minutes, remove from the oven and cool on wire rack.

Place the remaining three tablespoons butter and onion in a skillet over medium heat and cook until translucent.  Stir in the garlic and cook a minute.    Reduce the heat to a simmer and add the cream cheese and parsley, stirring occasionally, for five minutes.   Add mushrooms and cook over medium heat, stirring occasionally, five minutes.    Remove from heat and stir in prosciutto.    Spoon the mushroom mixture into prepared wonton wrappers and serve.
